Olives
On a high desert plain just 100 miles south of Lima, a 50-hectare plantation was established in the late eighties by Jose Vico & Family, which presently employs over 30 families. Their olives are grown, harvested and processed with the extraordinary care that precludes the necessity of chemical intervention.
