Chocolate Goji Berry Cookies
2 cups Super Flour
1/2 cups agave nectar
1/2 cup + 2 Tablespoons cacao powder
1/4 cup goji berries, grind in a coffee grinder
2 large dates, mashed
1 Tablespoon cacao butter or any nut butter
Knead well, form into shapes and refrigerate.
Super Simple Pie Crust
2 cups Super Flour
1/4 cup raisins
1-2 Tablespoons agave nectar
1 teaspoon cinnamon
1/4 teaspoon salt
Place all ingredients into food processor and blend until sticky. Press into a pie mold or torte pan and and fill with pie fillings.
Mesquite Pod Carrot Cake
For cake:
1 1/2 cups Super Flour
1 package Mesquite Pod Maple Walnuts
1/2 cups pecans
2 cups shredded carrot or (carrot pulp with 1/2 cup carrot juice)
3/4 cup chopped dried figs
1/2 apple, shredded or chopped fine
1/3 cup raisins
1 teaspoon cinnamon
1/4 teaspoon nutmeg
For frosting:
1/2 cup cashews
1/4 cup coconut oil
1/4 cup agave nectar
1 teaspoon vanilla bean
1 Tablespoon lemon juice and zest (optional)
Place Mesquite Maple Walnuts into food processor with figs, pecans and apple. Process until smooth. Place all cake ingredients into a mixing bowl and knead well. Press into a spring form pan.
Place all frosting ingredients into a Vit a-mix blender and blend until smooth. Add water as needed. Refrigerate for 1-2 hours before use.
Oatmeal Raisin Cookies
2 cups Super Flour
2/3 cup maple syrup
1/2 cup dates
1 cup walnuts
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/4 teaspoon cloves
1/2 cup raisins
Place all ingredients into food processor (except raisins) and blend until sticky. Add raisins and mix. Form into cookies and refrigerate.
Banana Walnut Squares
1 cup Super Flour
1 package Mesquite Pod Maple Walnuts, chopped fine
4 dried banana spears, minced until sticky
1/4 cup agave nectar
2 Tablespoons almond butter
2 large soft medjool dates
1/2 Tablespoon cinnamon
1/2 teaspoon nutmeg
sprinkle of salt
Place all ingredients into a bowl. Mash all together. Knead and work until all mixed together. Press into a baking pan or onto a cutting board. Shape and cut into squares. Refrigerate. Yum!
Super Fruit Bowl
1/2 cup Super Flour
1 apple, diced
1 pear, diced
1 banana, sliced
1/4 cup dried fruits (goji berries, currants, cranberries, mulberries etc)
1/4 cup chopped nuts
1/4 cup shredded coconut
2-4 Tablespoons maple syrup, honey, agave nectar
1/4 t cinnamon
Mix all together. Top with yogurt or favorite milk. Perfect breakfast.
Green Protein Balls
1 cup Super Flour
1/2 cup agave nectar
1/4 cup Hemp Protein
1/4 cup cacao butter, melted
1/4 cup minced macadamia nuts
1 Tablespoon Spirulina
1 Tablespoon maca powder
1 teaspoon vanilla bean or extract

This is tasty as heck. Add dates and coconut oil and you have delicious healthy cookie or crust. You can eat this stuff dry, it's so delicious. Expensive, but nothing comparable. (Posted on 11/15/12)
