In Iran, pistachios are known as the “smiling nut.” In China, they're called the “happy nut.” Pistachios are also known as the "green almond.” The green color in pistachios comes from lutein, which helps to prevent the most common form of blindness in older adults, and may help prevent or slow down atherosclerosis, the thickening of arteries, which is a major risk for cardiovascular disease.

I've bought these several times and love them. Really fresh tasting and crunchy and organic, too. The last bag I salted and roasted by making some salt water in large bowl, turning the pistachios in this for a bit, then bake/dry in moderate temp oven. After they cool they are totally addicting and delicious! Of course, not raw, but so good with a cold beer. If they're still a little moist and not crunchy inside, return to warmed oven (but oven turned off) and let them sit in there for an hour or so. (Posted on 11/15/12)
