Using extremely heavy grinding stones and a lot of patience, Jem is able to achieve incredibly smooth nut butters and artisanal chocolate products by grinding ingredients to a size under 20 microns, at which point your tongue cannot distinguish individual particles.

Jem 72% cacao bar is a dynamically proportioned formula that highlights the bold character and subtle notes of the bean utilized. Stone ground below 118 degrees, this bar embodies the perfect vehicle to deliver the macro micro and phyto nutrients that are present in the raw cacao composition.

Ingredients: Cacao liquor, coconut palm sugar, cacao butter, vanilla, salt, sunflower lecithin.

Both of these Jem Chocolate Bars taste great and they are so good for you that I don't feel guilty at all when I satisfy my sweet craving. I noticed that the 55% cacao was similar tasting to milk chocolate and the 72% was closer to the dark chocolate flavor. Another bonus is they are DAIRY free!!! And we all know when you can't have dairy finding a quality chocolate bar is hard. I definitely found it with Jem! (Posted on 11/15/12)
